Cafetos de Segovia, established in 2015 by sisters Ana and Martha Albir Sotomayor, represents the third generation of a family deeply rooted in coffee farming in Nicaragua. Their mission was to process and export high-quality coffee from their farms and other local estates. Today, the cooperative boasts over 40 seasonal workers, including 19 women from the Mozonte region, and employs eight permanent staff members.
Annually, Cafetos de Segovia exports 6,000 quintals of coffee (approximately 272,500 kilograms). The main office is located at Km 231, Carretera Ocotal - Jalapa, 300 meters north of Ramamesa, Mozonte, Nueva Segovia, Nicaragua. The cooperative includes Finca Agua Sarca, Finca El Naranjal, and Finca Santa Helena.
The cooperative provides its members with technical assistance, continuous quality improvement training, and financial support for farm enhancements and harvest estimates. They hold HACCP certification under the Nicaraguan Institute for Agricultural Protection and Health (IPSA), ensuring the highest standards of sanitary and phytosanitary measures.
Las Naranjas farm is named for the once-abundant orange trees on the property. Owned by Juan Carlos Herrera Lopez since 1970 as a family inheritance, the farm is located 500 meters west of Finca Santa Gema in El Pinabete, Los Arados, Mosonte, Nueva Segovia. Spanning 3.9 hectares, the farm yields an average of 12 quintals of coffee per hectare. The farm sits at an altitude of 1380 to 1450 meters and cultivates Catuai rojo, Catuai Amarillo, Catimor, and Caturra varieties on sandy loam soils. The harvest season extends from December to April. Las Naranjas employs one permanent worker and hires five additional workers during the harvest and processing periods.
The Las Naranjas lot is cultivated at altitudes between 1450 and 1550 meters on a 3-hectare plot. The farm uses eco-friendly practices, providing shade with forest species, fruit trees, and bananas. Low-intensity pesticides (green labels), organic fertilizers, and synthetic fertilizers are utilized. Regular pruning and shade management improve plant health, and only ripe cherries are manually harvested.
After selection, the cherries are floated and depulped, then fermented for 18 to 24 hours before being washed with clean water. The coffee is transported in plastic bags and macen sacks to the processing facility, ensuring cleanliness throughout the journey.
At the dry mill, the coffee is dried on African beds under micro-tunnel covers, never touching the ground. Rakes made of PVC (a type of plastic) are used for movement, maintaining cleanliness. Once dried, the coffee is stored separately in designated areas within the warehouse, always in new plastic bags and macen sacks. The coffee is then rested for about a month, hulled, classified, and packed in jute sacks and Ecotact bags for export, adhering to ICO standards.
Las Naranjas farm supports various social and environmental initiatives, promoting sustainability in all aspects. Farmers are paid based on the quality of their coffee, with a premium for well-processed parchment coffee.
The primary challenge faced by Las Naranjas is climate change, which has increased production costs. Future plans include improving the wet processing system to enhance production efficiency and quality.

Mountain Water Process Decaf
Using water from the highest mountain in Mexico, this coffee has been processed naturally leaving a coffee that is 99.9% caffeine free.
Our coffee is from the varietals Bourbon, Caturra, Typica and Catuaí and is grown around 1,000 meters. The relative low altitude results in large beans and smooth coffee with a low acidity.
This decaf coffee is from smallholder producers who deliver to the San Cristobal de las Casas and Yajalón buying stations in northern Chiapas, to the east and northeast of Tuxla Gutiérrez the region.

This supremo coffee from Colombia, which is of the Caturra, Typica and Bourbon varieties, is chocolatey and nutty and we source it from Medellin. A delicious mild coffee as a filter and sweet and slightly bright as an espresso.

El Salvador Las Isabellas
Our coffee from El Salvador is from the Las Isabellas farm and is a mixture of Pacamara and Bourbon. Las Isabellas is located in the south face of "Cerron Grande" of Apaneca at the west region of El Salvador at an altitude of 1200 to 1450m and is part of the Blue Harvest project.
At Las Isabellas you can find 175 acres of natural forest, natural springs and waterfalls! Las Isabellas is a certified Rainforest Alliance farm. The owner of the farm is Jose Roberto Santamaria who is dedicated to managing the farm and the mill.

Ethiopia Limu
One of our favourite coffees here at Limini. This coffee highlights to us how delicious Ethiopian coffee is. It is wild, winey and yet full bodied. It is similar to our Ethiopian Yirgacheffe coffee but not as floral.
Our Limu is grown about 1600 masl in the Oromia region of south west Ethiopia and is a mix of coffees beans from just six farms of the Eastern African Heirloom varieties.

Ethiopia Yirgacheffe
This coffee from Negele Gurbitu comes from the Yirgacheffe region which is a famous coffee growing region in Ethiopia.
Grown very high up around 1700 to 2000 meters, this coffee has been harvested between October and December and is fully washed. These coffee trees are of the fantastic Heirloom variety.
Expect really funky and floral flavours; think of Earl Grey tea and whisky.

Guatemala Antigua
Guatemala has been growing coffee since the 1850s and is one of the top producers in Central America. Coffees from Guatemala are simply beautiful and one of our favourite here at Limini.
Our Guatemalan coffee beans are from plantations in volcanic valleys surrounding Antigua. This coffee is surrounded by three volcanoes: Agua, Fuego and Acatenango. The plantations have rich volcanic soil and excellent growing conditions at an altitude of 1650 metres. Varieties are Caturra, Bourbon and Typica.
This coffee is chocolatey and sweet with a beautiful body. There are notes of blackberries in the aroma. Delicious.

Guatemala Huehuetenango
This coffee is from Huehuetenango which is one of the three non-volcanic regions in Guatemala. It is one the best coffee production areas with very high altitude and dry cultivation.
Our coffee is a SHB (Strictly Hard Bean) from the varieties Typica, Bourbon, Caturra and Catuai and is a washed process harvested in January to April.

Indonesia Sumatra Lake Toba
Indonesia is one of the largest coffee producers in the world, usually in the top five.
Coffee growing was started during colonial times around 1696 as the region provided some excellent growing conditions. Coffee beans from Indonesia produce low acidity and high bodied profile.
This coffee is grown near Lake Toba which is the largest volcanic lake in the world. Processed using Giling Basah, this coffee has a huge body and a spicy aroma with hints of tobacco. The varieties are Catimor and Typica.

Rwanda Inzovu
Rwanda might be small but the coffee that comes out of this African country can sometimes be nothing but absolutely divine. As Rwanda has no coastline it can be expensive to export the coffee. There are some 400,000 small-scale growers and all coffee is Arabica.
Our coffee, which is grown at 1,400 - 1,900 meters, is from the varieties Bourbon and Typica and is a fully washed mix of coffees from 40 washing stations and 35,000 farmers in Rwanda. The coffee is hulled, graded and hand sorted at the Rwanda Trading Company in Kigali. This is a fruity and well balanced sweet coffee with beautiful hints of cranberries. We roast our Rwanda coffee beans to a light to medium level.

FAQ
What espresso machines are compatible? - Coffee Pods are suitable for use with domestic drop through Nespresso® machines only, excluding professional machines, 'built in' models and the new Vertuo range. They aren't compatible with Keurig, Tassimo, Dolce Gusto, Lavazza or Nespresso® Professional or Vertuoline systems.
How do I dispose of used pods? - Simply dig them into your garden soil. Covered pods in damp conditions should decompose into fertiliser within a month or so. If you have no facility to bury them in your garden, place used pods into your food waste bin or your general waste bin. Either way, they’ll end up in landfill and decompose into fertiliser within a few weeks.
What grind? - It depends a little on your preference but slightly coarser than espresso is usually great. Select the POD icon when you order your coffee from us.

Using high shock resistant plastics, the Thumpa can cope with any commercial coffee situation. The flared collar allows for excess splatters to be easily captured. The slotted bar inserts allow for easy removal of the rod and rubber set for cleaning and maintenance. The top is removable for easy emptying OR for use in conjunction with a waste bag. The tube can be easily removed and cut to whatever height is desired.
Pitcher rinser
A pitcher rinser sits in the worktop close to your espresso machine and connects to the water supply. When you place your milk pitcher on top and press it down a spray of water will clean your jugs quickly and efficiently.
The pitcher is 210mm long, 190mm wide and 22mm deep. The water inlet is a 3/8 John Guest connection.
